The combination of dark chocolate and black garlic creates a depth of flavor that’s simply unforgettable.

Yield: 15 medium-large cookies

Ingredients:

2 cups (280 grams) all-purpose flour 

½ teaspoon baking soda

¾ teaspoon salt 

1 cup (227 grams) unsalted butter

1-½ cups (240 grams) granulated sugar

¼ cup (50 grams) brown sugar

1 egg

1 tsp vanilla extract

2 Tablespoons water

6 ounces dark chocolate, chopped 

6 Black Garlic Cloves chopped or 2 teaspoons of Black Garlic Paste

Preparation:

  1. Whisk the flour, baking soda, and salt in a large bowl. Set aside. 

  2. Cream the butter and sugars together for at least 3 minutes, until very pale and fluffy. 

  3. Incorporate the egg, vanilla, and water, and beat until airy, scraping down the bowl as necessary.

  4. Add the flour mixture and mix until just combined. 

  5. Gently fold in the chocolate and Black Garlic Cloves or Paste.

  6. Scoop the dough into large (¼ cup) balls and place them on a parchment-lined sheet. 

  7. Freeze the dough while preheating the oven to 350 degrees (you can also freeze them completely and bake later). 

  8. Bake the cookies for 10 minutes, then open the oven and firmly tap the pan against the oven rack to “collapse” the cookies, giving them rumpled edges. Bake for another 6 minutes, or until the edges are golden brown, tapping the pan a few more times. 

  9. Remove the cookies from the oven and let them cool for a few minutes before transferring them to a wire rack to cool completely.

  1. Replace the all-purpose flour with King Arthur Baking Company Gluten-Free Measure for Measure Flour.

  2. Use gluten-free chocolate. 


2. Strawberries with Black Garlic and Balsamic Vinegar

Ingredients:

1-pint strawberries

1 Black Garlic Clove, very finely chopped or ¼ teaspoon Black Garlic Paste

2 Tablespoons sugar

1 Tablespoon balsamic vinegar

Crème Fraiche for garnish

Mint leaves for garnish

Preparation:

  1. Wash and hull the strawberries, and cut them in half. 

  2. Finely chop the Black Garlic Clove and mix with the balsamic vinegar and sugar. Taste and adjust the sweetness as needed. 

  3. Place the marinade and the strawberries in a non-metallic bowl and refrigerate for one hour.

  4. Serve in small dishes with crème fraiche. Garnish with fresh mint.

Ingredients:

12 oysters, shucked (Copps Island Oysters, with a mild brine and hints of sweetness and mineral, pair well with Black Garlic Pearls)

2 teaspoons Black Garlic Pearls, strained, for garnish 

½-1 lemon, sliced in wedges, depending on the number of oysters

Preparation:

  1. Arrange shucked oysters onto an oyster plate or platter.

  2. Optional: Lightly squeeze lemon wedge(s) on oysters. 

  3. Place ⅛ teaspoon of Black Garlic Pearls in the center of each oyster. 

b) Roasted Oysters with Black Garlic Butter 

Prep Time:   5 minutes

Ingredients:

  2. Place shucked oysters on a baking sheet with sides.

  5. Remove oysters from the oven and arrange on an oyster plate or platter.
